Ingredients


  • 1 bunch of collard greens
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1/4 teaspoon of red pepper flakes (optional)
  • Salt and pepper to taste
  • small pieces of chopped vegan bacon (optional)

 

Directions


  1. Rinse the collard greens well and pat them dry.
  2. Stack a few of the collard green leaves on top of each other and roll them up like a cigar. Slice the rolled-up leaves into thin strips, about 1/4 inch wide.
  3. In a large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and red pepper flakes and vegan bacon, if using, and sauté for 1-2 minutes, or until fragrant.
  4. Add the collard greens to the skillet and toss to coat with the garlic and oil. Cook the collard greens for 3-5 minutes, stirring frequently, or until they start to wilt and become tender.
  5. Increase the heat to high and continue to cook the collard greens, stirring constantly, for another 2-3 minutes, or until they are crispy and lightly charred in spots.
  6. Season the collard greens with salt and pepper to taste. Serve hot as a side dish or add to your Potato & leek soup recipe.
